Baked Cider Doughnuts
1 c. all-purpose flour
1 c. whole wheat flour
¼ c. powdered milk
2 tsp. baking powder
1 tsp. salt
¼ tsp. ground nutmeg
¼ tsp. ground cinnamon
2 eggs, beaten
1 Tbsp. honey
1 c. unsweetened apple juice concentrate, thawed
1 tsp. vanilla
Preheat oven to 325°. Lightly grease doughnut pan with cooking spray. In large bowl, stir together flours, milk, baking powder, salt, cinnamon & nutmeg. Make a well in center and pour in eggs, honey, apple juice concentrate and vanilla. Mix until well blended. Fill each depression in prepared doughnut pan 2/3 full with batter. Bake for 8-10 minutes or until tops spring back when lightly touched. Allow doughnuts to cool before removing from pan.
Yield: 12 servings.
