Honey Cinnamon Rollups (taste like Baklava, but a fraction of the work!)
2 c. ground walnuts, toasted
¼ c. sugar
2 tsp. ground cinnamon
12 sheets frozen phyllo dough, thawed
½ c. butter, melted
Syrup:
½ c. honey
½ c. sugar
½ c. water
1 Tbsp. lemon juice
Preheat oven to 350°. Mix walnuts, sugar and cinnamon. Place one sheet of phyllo dough on 15×2” piece waxed paper; brush with butter. Place a second phyllo sheet on top, brushing it with butter, (Keep extra phyllo covered with plastic wrap and a damp towel to prevent it from drying out). Sprinkle with ¼ c. walnut mixture. Using waxed paper, roll up tightly “jelly-roll” style, starting with long side, removing paper as you roll. Slice roll into four smaller rolls place in greased 9×13” baking dish. Repeat with remaining phyllo dough. Bake until light brown, 14-16 minutes. Cool dish on wire rack. In small saucepan, mix syrup ingredients. Bring to boil. Reduce heat; simmer 5 minutes. Cool 10 minutes. Drizzle rolls with syrup; top with remaining nut mixture.
