JANUARY 2ND: CREAM PUFFS and SWISS CHEESE

Turkey & Swiss Quesadillas

Combine 2 Tbsp. reduced fat Parmesan Peppercorn Ranch Salad dressing and 1 Tbsp. Dijon mustard; spread over one side of 2 whole wheat tortillas. Place tortillas, spread side up, on greased griddle. Layer one slice reduced fat Swiss cheese (halved), ¼ avocado (sliced) and 3 oz. sliced cooked turkey breast, over half of each tortilla. Fold over and cook over LOW heat for 1-2 minutes on each side or until cheese is melted. Serves 2.
