Strawberry Cream Pie
½ c. crushed cream filled chocolate sandwich cookie
2 Tbsp. sugar
2 Tbsp. butter, melted
Filling:
4 oz. cream cheese, softened
2 Tbsp. sugar
½ tsp. vanilla
½ c. mashed fresh strawberries
½ c. heavy whipping cream
2 Tbsp. confectioners’ sugar
Combine cookie crumbs, sugar & butter; press into 7” pie plate. Bake at 375° for 8 minutes. Cool completely on wire rack. In small mixing bowl, beat cream cheese, sugar and vanilla until smooth. Stir in strawberries. In another small mixing bowl, beat cream until it begins to thicken. Gradually add confectioners’ sugar, beating until stiff peaks form. Fold into cream cheese mixture. Spoon into crust. Refrigerate 4 hours or overnight.
