Holiday Cookie Pizza

1 (16.5 oz.) roll refrigerated sugar cookie dough, cut into 1/4″ thick slices

1 c. semisweet chocolate pieces (6 oz.)

1/2 c. creamy peanut butter, melted

1 1/2 c. red and green candy coated milk chocolate pieces (M&M’s)

Holiday Sprinkles

Press cookie dough slices into greased 13″ pizza pan. Bake in a 350 oven 15-20 minutes or until golden. Immediately sprinkle with chocolate pieces; let stand to soften, then spread chocolate evenly over crust. Drizzle melted peanut butter over chocolate. Sprinkle with red and green candy coated milk chocolate pieces and sprinkles. Makes 12.


Mexican Lasagna

1 lb. ground beef, 10% fat

2/3 c. chopped white onion

1 (1.24 oz.) pkg. reduced sodium taco seasoning (like Ortega)

1 tsp. cumin

1 tsp. chili powder

1 (15.5 oz.) can black beans, drained and rinsed

24 oz. salsa

16 oz. light sour cream

12 (6″) flour tortillas

2 c. Mexican blend shredded cheese

Green onions, sliced

Preheat oven to 400. Coat a 9×13″ pan with cooking spray. heat a large skillet over MEDIUM-HIGH. Add beef and onion. Cook, crumbling beef with a spatula. Add taco seasoning, cumin and chili powder; cook until beef is cooked through. Add black beans and 1/4 c. water to skillet. Stir and heat through; about 1 minute. Pour about 1/3 c. salsa in bottom of baking pan. (just enough to cover). Spread a thin layer of sour cream on 4 tortillas. Add to pan as next layer (it’s OK if tortillas overlap). Top with light sprinkle of meat mixture and 1/3 of cheese. Repeat with salsa, tortillas spared with sour cream, meat and cheese until pan is full, 3 layers, ending with cheese. Bake 25 minutes, or until golden brown. Top with green onions. Serves. 10
