Bourbon Whiskey BBQ Sauce 

½ onion, minced

4 cloves garlic; minced

¾ c. bourbon

2 c. ketchup

½ c. packed brown sugar

1/3 c. cider vinegar

¼ c. Worcestershire sauce

¼ c. tomato paste

2 Tbsp. liquid smoke flavoring

½ Tbsp. salt (or 1 tsp. is plenty)

½ tsp. black pepper

1/3 tsp. hot pepper sauce, or to taste

Combine onion, garlic and bourbon in deep saucepan. Being careful not to ignite alcohol, simmer over MEDIUM heat for 10 minutes or until onion is translucent (If it does ignite, cover with lid to extinguish flames.) mix in ketchup, brown sugar, vinegar, Worcestershire, tomato paste, liquid smoke, salt, pepper and hot pepper sauce. Bring to boil. Reduce heat to MEDIUM-LOW and simmer for 20 minutes. If you prefer a smooth sauce, strain through a fine-mesh strainer. Pour into a clean 1-quart canning jar and it will keep in fridge for several weeks. ¼ c. serving = 107 calories
