Sweet Potato Brownies

1/2 c. coconut or white sugar

1/3 c. all purpose flour

1/3 c. unsweetened cocoa powder

1 1/2 tsp. baking soda

1/8 tsp. salt

1 c. almond butter

3/4 c. mashed cooked sweet potato*

1/4 c. honey

1 tsp. vanilla

3 oz. bittersweet chocolate, finely chopped

Preheat oven to 325. Line an 8″ square baking pan with parchment paper. In medium bowl stir together first five ingredients. (sugar, flour, cocoa powder, baking soda and salt). In large bowl, combine next four ingredients (almond butter, sweet potato, honey & vanilla). Stir flour mixture just until combined. Stir in chocolate. Spread batter in pan. Bake 25-30 minutes or until top is puffed and appears dry. Cool in pan on wire rack. If desired, dust with additional cocoa powder. *(peel one 8 oz sweet potato and cut into 2″ pieces. Place sweet potato in steamer basket in saucepan. Add water to saucepan to just below basket. Bring to boiling; reduce heat. Steam, covered, 18 minutes or until very tender. Press sweet potato through ricer, or mash with a potato masher.
