October 4th is Taco Day

Taco Casserole

1 lb. lean ground beef

1 (1 ¼ oz.) pkg. taco seasoning

2 c. cooked brown rice

1 (15 oz.) can fat free refried beans

1 ½ c. low fat sharp cheddar cheese, divided

1 c. salsa

2/3 c. corn chips

1 (2 1/3 oz.) can sliced black olives, drained

Chopped green onions, diced avocado or tomato (optional)

Preheat oven to 350°. In large nonstick skillet, cook ground beef, taco seasoning and 3 Tbsp. water until no pink remains. Place cooked rice in 8” square baking dish. Microwave beans and salsa until hot, about 2 minutes. Stir; then spoon over rice. Layer beef over bean mixture. Sprinkle half cheese over beef. Scatter chips evenly over cheese and top with remaining cheese and black olives. Bake until cheese is melted, about 10 minutes. Top with green onions, avocado and tomato, if you wish. Serves 6. (Reduce the cheese to 1 cup and skip the corn chips to cut more calories).
