October 29th is Pancake and Oatmeal Day

Baked Blueberry and Peach Oatmeal

3 c. old fashioned oats

½ c. brown sugar

2 tsp. baking powder

½ tsp. salt

2 egg whites + 1 egg

1 ¼ c. milk

¼ c. canola oil

1 tsp. vanilla

1/3 c. walnut pieces

1 c. fresh or frozen blueberries

1 (15 oz.) can peaches, drained and chopped

Mix oats, brown sugar, baking powder & salt in large bowl; set aside. Whisk egg, egg whites, milk, oil & vanilla in separate bowl. Add to dry ingredients. Blend; let stand 5 minutes. Stir in peaches, blueberries & walnuts. Turn into greased 11×7” baking dish. Bake at 350° for 35-40 minutes or until top is lightly browned. Cut into squares; serve with added milk, if desired. (Lightly wrap leftovers in aluminum foil; place in freezer container and freeze. Thaw in the fridge. Microwave 1-1 ½ minutes on HIGH).

This was another “listener-inspired” recipe that has now become one of my favorites.

It’s low in calories, very filling and I wrap all leftovers in plastic wrap and freeze. Just place a single serving in a bowl, microwave for about 60-75 seconds; add a little milk and enjoy.
