November 21st is Stuffing Day

Bacon & Cheese Stuffing Gems 

3 slices bacon

2 ½ c. leftover cooked bread stuffing

½ c. shredded cheddar cheese

1/3 c. finely minced scallions

Milk or broth (optional)

Preheat oven to 350. Lightly grease a 20-cup gem or mini tart pan. Cut bacon crosswise into ½” slices. You need 20 total. Discard any pieces that are all or mostly fat. Place stuffing in bowl, break it up a bit with a fork. Add the cheddar and scallions; toss well to distribute evenly. If mixture is at all dry, moisten with a little milk. Using a heaping tablespoon per “gem”, press stuffing mixture into gem cups. Top each with piece of bacon. Bake for 15-20 minutes, until bacon is cooked. *If you don’t have a gem pan, you can do this in a regular 12-cup muffin tin (with smallish cups). Use the same amount of stuffing per muffin cup and make more than one batch.
