November 10th is Vanilla Cupcake Day

Vanilla Cupcakes  

2/3 c. butter, softened

¾ c. superfine sugar

1 ½ c. self-rising flour

3 eggs

1 tsp. vanilla

Preheat to 350. Grease a 12-cup muffin pan or line with paper baking cups. In large bowl, mix butter and sugar with and electric mixer until light and fluffy about 5 minutes. Stir in eggs, one at a time, blending well after each one. Stir in vanilla and flour just until mixed. Spoon batter into cups, dividing evenly. Bake until tops spring back when lightly pressed, 18-20 minutes. Cool in pan set over wire rack. When cool, arrange cupcakes on serving platter.
