MAY 9TH: BUTTERSCOTCH BROWNIES

White Chocolate Blondies

8 oz. white chocolate, chopped

1 Tbsp. vanilla extract

½ c. butter, softened

1 ¼ c. all-purpose flour

2 eggs

¾ tsp. salt

1/3 c. white sugar

1 c. semisweet chocolate chips

Preheat oven to 350°. Grease 9 x 9” baking pan. Melt white chocolate and butter in top of double boiler, over barely simmer water. Stir occasionally until smooth. Set aside to cool. In large bowl, using an electric mixer, beat eggs until foamy. With mixer still running, gradually add sugar & vanilla. Drizzle in the melted white chocolate mixture. Combine flour & salt; fold into white chocolate mixture using rubber spatula or wooden spoon. Fold in chocolate chips. Spread batter evenly into pan. Bake 25 minutes or until toothpick inserted in middle comes out clean. Cool pan on wire rack before cutting into bars. Serves 12
