MAY 22ND: VANILLA PUDDING

Chocolate Chip Pudding Cookies

3 1/3 c. flour

1 ½ c. butter, softened

½ c. granulated sugar

3 eggs

1 ½ c. nuts (optional)

1 ½ tsp. baking soda

1 c. brown sugar, packed

1 ½ tsp. vanilla

3 c. chocolate chips

1 large (6 serving size) pkg. instant vanilla pudding

Preheat oven to 375°. Combine flour and baking soda; set aside. Combine butter, sugars, dry pudding mix and vanilla in large bowl. Beat until smooth. Add eggs. Mix to combine. Gradually add flour mixture. Stir in chips & nuts (if using). Drop onto ungreased cookies sheets and bake for 8-10 minutes. Yield: 7 dozen.
