Peanut Butter Oatmeal Cookies

¾ c. peanut butter

½ c. butter

¾ c. packed brown sugar

½ c. granulated sugar

½ tsp. baking powder

¼ tsp. baking soda

2 eggs

1 tsp. vanilla

1 ¼ c. all purpose flour

2 ½ c. regular rolled oats

1 ½ c. raisins and/or semisweet chocolate pieces

Lightly grease large cookie sheets, set aside. In large mixing bowl, beat peanut butter and butter with an electric mixer on MEDIUM for 30 seconds. Add brown sugar, granulated sugar, baking powder, baking soda, Beat on MEDIUM until fluffy. Add eggs and vanilla; beat well. Beat in flour on LOW. With wooden spoon, stir in rolled oats and raisins (and/or chocolate chips). Using ¼ c. dough for each cookie, drop 3” apart on cookie sheets. Press into 4” circles. Bake at 375° for 10 minutes or until edges are light brown. Let cookies stand for 1 minute. Transfer to wire racks to cool completely.  (To make ice cream sandwiches: place two scoops of vanilla and two scoops of chocolate ice cream between 2 cookies. Place each sandwich on dessert plate and top with another scoop of each flavor ice cream. Serves 16.
