Spice Cookies
½ lb. fruitcake
1 ½ c. sugar
¾ c. vegetable shortening
½ c. water
1/3 c. molasses
1 egg
½ c. raisins
3 c. all-purpose flour
1 Tbsp. baking soda
1 tsp. ground cinnamon
1 tsp. salt
Preheat oven to 375°. Coat baking sheets with cooking spray. In food processor, process fruitcake; set aside. In large bowl, with electric beater on MEDUM, cream sugar and shortening. Add water, molasses, egg and fruitcake; mix well. Stir in raisins. Mix in flour, baking soda, cinnamon and salt; drop by teaspoonfuls onto baking sheet. Bake 11-12 minutes or until bottoms are light golden. Remove to wire rack to cool completely.
