FEBRUARY 4TH: HOMEMADE SOUP and POPCORN

Hearty Chicken Gumbo

1 lb. bacon, chopped

1 ½ lb. boneless, skinless chicken breasts, cut into 1” chunks

1 ½ lb. boneless, skinless chicken thighs, cut into 1” chunks

3 ½ c. chicken broth

1 (28 oz.) can diced tomatoes, undrained

1 (15 oz.) can whole kernel corn, drained

1 (16 oz.) pkg. frozen cut okra, thawed

1 tsp. salt & black pepper

In soup pot, brown bacon over MEDIUM heat 10-12 minutes, or until golden; drain. Add remaining ingredients; bring to boil. Allow to boil 35-40 minutes, or until chicken is no longer pink and gumbo has thickened, stirring occasionally.  (For more flavor, add some hot pepper sauce, just before serving).
