DECEMBER 26TH: BOXING DAY (“so why not an “ice box” dessert!)

Molasses Ice Box Cookies     

1 c. butter

2 c. sugar

2 eggs, beaten

½ c. molasses

2 tsp. ginger

1 tsp. baking soda

1 tsp. cinnamon

½ tsp. salt

3-4 c. flour

Combine butter and sugar. Add following ingredients in this order: eggs, molasses, ginger, soda, cinnamon and salt & flour. Make 3 balls of dough and wrap or cover with plastic wrap. Refrigerate overnight and until ready to bake. (Dough will keep 2-3 days in refrigerator). Roll and cut into shapes. Bake at 350° for 8 minutes. DO NOT OVERBAKE. Frost and decorate.
