Date Nut Bread 

1 ½ c. dates, pitted & chopped

2 ¼ c. boiling water

3 tsp. baking soda

1 c. chopped walnuts

2 c. white sugar

3 Tbsp. margarine

2 eggs, beaten

1 tsp. salt

4 ½ c. all purpose flour

1 tsp. vanilla

Combine baking soda with boiling water. Soak dates in water and baking soda solution for 30 minutes. Cream sugar and butter together. Add eggs, vanilla, dates, nuts, flour & salt. Divide batter equally between two 9×5” greased loaf pans. Bake 1 hour at 300° (or until loaf tests done). Can be frozen when cool.
