Ramen Joy
1 ¼ c. sweetened shredded coconut
1 (3oz.) pkg. ramen noodles, any flavor, crushed*
½ c. slivered almonds, coarsely chopped
¾ c. sweetened condensed milk
¾ tsp. vanilla
8 oz. chocolate candy coating
¼ tsp. salt
¾ c. powdered sugar
Line bottom and sides of 9×13 pan with foil. Lightly coat with nonstick spray. Heat large skillet over MEDIUM heat. Add coconut, noodles and almonds; cook 3-5 minutes or until lightly golden brown in color, stirring frequently. Remove from heat. Stir in condensed milk, vanilla & salt until well blended. Sir in powdered sugar. Fold in noodles mixture until thick paste consistency is reached. Spread mixture onto foil in prepared pan to approx. ¼” thickness. Melt chocolate according to pkg. directions. Spread chocolate evenly over noodles mixture. Place in freezer 15 minutes to firm slightly. Cut into pieces. Makes 32 *(discard seasoning packet).
