Randall and Susan Wallintin joined the ARC about 9 years ago. Susan is currently serving as President and Randy is a Board Member. They enjoy all the events and activities and agree that this organization is a great way to gain and share information with other families with special needs.
Susan said this recipe is from her mother. The family lived on a farm and had a huge garden. They planted a lot of different vegetables which her mom would can or give to family and friends. She developed this recipe to use some of the remaining vegetables at the end of the growing season. It is one of Randall’s favorite soups.
1 lb. ground beef
1 c. chopped onion
4 c. hot water
1 c. each, chopped carrots, celery and potatoes
2 tsp. salt
½ tsp. pepper
1 bay leaf
Pinch of basil
6 whole tomatoes or 1 quart of canned tomatoes
Brown beef. Add onions; cook 5 minutes. Add water, vegetables (except tomatoes), and seasonings. Mix thoroughly. Bring to boil, cover and simmer 20 minutes. Remove bay leaf. Add tomatoes, cover and simmer 10 minutes or until done to desired consistency.
