Sprigs in a Blanket
On lightly floured surface, roll out 1 sheet frozen (thawed) puff pastry to 10” square. Brush sheet with 3 Tbsp. Dijon mustard, sprinkle with ¼ c. grated pecorino cheese and line with 2-3 very thinly sliced prosciutto. With sharp knife or pizza cutter, cut sheet in half; then cut halves into twenty ½” wide, 5” long strips. Wrap each strip around 1 stalk asparagus, trimmed, prosciutto side facing in. Place on 1-2 large parchment lined cookie sheets. Lightly spray wrapped asparagus spears with nonstick cooking spray. Bake in 425° oven for 20-25 minutes or until golden. Makes 40.
