APRIL 22ND: JELLY BEANS

Jelly Bean Brittle

4 Tbsp. butter, divided

2 ½ c. mini jelly beans

3 c. sugar

1 c. light corn syrup

½ c. water

½ tsp. salt

2 tsp. baking soda

In a microwave bowl, melt 1 Tbsp. butter. Cube remaining butter and set aside. Line 2 15x10x1” jelly roll pans with foil. Brush with melted butter. Arrange jelly beans evenly in the pans. In sauce pan, combine the sugar, corn syrup and water. Bring to a boil over medium heat stirring constantly until the candy thermometer reads 240° (soft ball stage). Stir in cubed butter and salt. Cook and stir until mixture reaches 350° (hard crack stage). Stir in baking soda, (mixture will foam). Quickly pour over the jelly beans. Spread with a buttered metal spatula. Cool and break into pieces. Yield: 2 ½ lb.
