Animal Crackers

½ c. rolled oats

¾ c. all purpose flour

¼ tsp. baking soda

¼ tsp. salt

¼ c. butter

2 tsp. honey

¼ c. buttermilk

Preheat oven to 400°. Grind oats until fine using a blender or food processor. In medium bowl, stir together blended oats, flour, baking soda and salt. Cut in butter using pastry blender or your fingers until butter lumps are smaller than peas. Stir in buttermilk and honey to form stiff dough. On lightly floured surface, roll dough out to 1/8” thickness. Cut into desired shapes with cookie cutters. Place cookies 1” apart onto cookie sheets. Bake 5-7 minutes until edges are lightly browned. Remove from cookie sheets to cool on wire racks.
