Applesauce Pancakes

2 c. dry pancake mix

1 tsp. cinnamon

2 eggs

1 c. applesauce (unsweetened or sweetened)

1 tsp. lemon juice

½ c. milk

Whisk together pancake mix and cinnamon in large bowl. Make well in center. Add eggs, applesauce, lemon juice and milk and stir until smooth. Heat a lightly oiled griddle or skillet over medium low heat. Working in batches of 3-4, pour batter onto griddle, using about ¼ c. for each pancake. Cook until big bubbles appear on top, about 1 minutes, then flip and cook until browned on bottom, about 1 minute more. (Use pumpkin puree instead of applesauce and increase the milk to ¾ c and you’ve got pumpkin pancakes).

Makes 15 pancakes
