No Bake Lemonade Cheesecakes 

3 oz. frozen lemonade concentrate; thawed

1 c. frozen whipped topping, thawed

2/3 c. sweetened condensed milk

1 (6 tart) package graham cracker tart shells

½ pint fresh strawberries or blueberries for garnish

In large bowl, fold together lemonade, whipped topping, and sweetened condensed milk. Spoon into tart shells and refrigerate until chilled. Top with berries and serve.

 

 

Up and Down Biscuits 

2 c. all-purpose flour

4 tsp. baking powder

½ tsp. cream of tartar

¼ tsp. salt

¼ c. shortening

¾ c. fat free milk

Sugar and cinnamon (optional)

Preheat oven to 450°. Stir together flour, baking powder, cream of tartar and salt in large mixing bowl. Cut in shortening until mixture resembles coarse crumbs. Make a well in center; add milk. Stir just until dough clings together.  Knead dough gently for 10-12 strokes on a lightly floured surface. Divide dough in half. Roll one portion into 12×10” rectangle. If desired, sprinkle sugar and cinnamon over rectangle. Cut rectangle into five 12×2” strips. Stack strips one on top of the other. Cut into six 2” square stacks. Place stacks, edge-side down, in greased muffin cups. Repeat with remaining dough. Bake for 10-12 minutes or until golden. Serve warm. Makes 12 biscuits.

 

Easy Tater Tot Casserole 

1 ½ lb. ground beef

1 c. diced onion

1 pinch garlic powder, or to taste

1 pinch salt and ground black pepper to taste

1 (26.5 oz.) can condensed cream of mushroom soup

1 (16 oz.) package frozen bite size potato nuggets (Tater Tots®)

2 c. shredded Cheddar cheese

1 pinch paprika, or to taste

1 pinch dried parsley flakes, or to taste

Preheat oven to 350°. Grease a 9×13” baking dish. Cook and stir ground beef, onion, garlic powder, salt and black pepper in skillet over MEDIUM heat until beef is browned and crumbly, 7-10 minutes. Spread beef into bottom of prepared baking dish. Stir cream of mushrooms soup, potato nuggets and Cheddar cheese together in large bowl until potato nuggets are evenly coated in soup and cheese. Spread potato nugget mixture over beef mixture. Bake until browned, about 45 minutes. Sprinkle paprika and parsley flakes over top.
