Sweet Bacon Wrapped Pork Loin
1 (3 lb.) boneless pork loin
Salt & pepper to taste
8 sliced bacon
2 Tbsp. honey
2 Tbsp. balsamic vinegar
2 Tbsp. dry red wine
1 sweet onion; minced
1 Tbsp. chopped fresh rosemary
2 Tbsp. golden raisins
Preheat oven to 375°. Line a shallow roasting pan with aluminum foil. Season pork loin with salt & pepper. Wrap bacon slices around the pork loin and secure with toothpicks. Preheat a large skillet over MEDIUM-HIGH heat; add pork loin. Cook until golden brown on all sides, about 10 minutes. Place onto roasting pan. Stir together honey, balsamic vinegar, red wine, onion and rosemary in small bowl; spread over meat. Roast the pork loin for 15 minutes; sprinkle with raisins. Continue cooking until internal temperature reaches 145°, about 15 minutes more. Remove from oven and allow to rest for 5 minutes before removing toothpicks and slicing.
