Apple Brown Betty

8 c. chopped apples, several varieties mixed

1 c. sugar; divided

1 ½ tsp. cinnamon

1 tsp. nutmeg, plus more for garnish

¾ loaf whole wheat bread (to make about 5 cups crumbs)

½ c. (1 stick) butter or margarine, melted

½ pint whipping cream

1 Tbsp. powdered sugar

½ tsp. vanilla extract

Preheat oven to 400. Spray a 9×13” baking dish with cooking oil. Toss apples with ¾ c. sugar and 1 tsp. nutmeg in large bowl. In food processor, process bread to crumbs with remaining sugar and cinnamon. Add butter and continue processing until all crumbs are moistened. Place a layer of bread crumbs in baking dish. Spread apples over crumbs and top with more bread crumbs. Cover loosely with foil and bake for 25 minutes. Reduce oven to 350°; continue baking for 20 minutes. During the last 5-10 minutes, remove foil to brown top. Meanwhile, whip crema with powdered sugar and vanilla until soft peaks form. Remove betty from the oven and serve with whipped cream. Sprinkle very lightly with nutmeg.
