OCTOBER 29TH – PANCAKE OATMEAL

Apple Potato Pancakes (Mr. Food)

3 baking potatoes, peeled and grated

1 Granny Smith apple, peeled, cored and grated

¼ c. freshly chopped onion

1 egg, beaten

½ c. all-purpose flour

¼ tsp. ground cinnamon

1 tsp. salt

½ c. vegetable oil

Place potatoes, apple and onion in strainer. Press down with back of large spoon to extract excess moisture. (If they’re still wet, wrap in clean dish cloth and squeeze excess moisture). In large bowl, combine potatoes, apple, onion and eggs; mix well. Gradually add flour, baking powder, cinnamon & salt. Mix well. In large skillet, over MEDIUM heat, heat oil. Using about 1/3 c. batter per pancake, form into pancake shape and place in oil. Fry in batches 3-4 minutes per side or until golden and cooked through. Drain on paper towels; serve hot. Makes 8. Serve with applesauce or sour cream, if desired.
