Muffin Tin Potatoes Gratin
2 Tbsp. butter
3 cloves garlic, minced
2 Tbsp. all-purpose flour
¾ c. milk
½ c. freshly grated parmesan cheese
Salt & pepper to taste
2 large potatoes, peeled and thinly sliced
Preheat oven to 400°. Spray 12 muffin cups with cooking spray or grease with butter. Heat butter in saucepan over MEIDUM heat. Cook and stir garlic in melted butter until fragrant, about 1 minutes. Add flour to garlic mixture; cook and stir until mixture is smooth and thickened, about 2 minutes. Slowly pour milk into flour-butter mixture while continuously stirring with whisk until sauce until cheese melts from heat of the sauce; season with salt & pepper. Divide potatoes among muffin cups and spoon cheese sauce over potatoes. Bake until potatoes are tender, about 25 minutes. 12 servings. 92 calories each.
