OCTOBER 24TH – BOLOGNA

Fried Bologna Casserole

8 slices bologna

3 Tbsp. butter

1 onion, chopped

4 c. warm mashed potatoes

1 ½ c. shredded Cheddar cheese

Preheat oven to 350°. Grease a 1 ½ quart baking dish. Heat skillet over medium high heat. Fry bologna slices in hot skillet until browned on both sides, about 1 minute per side. Drain on paper towel-lined plate. Wipe excess grease from skillet, reduce heat to medium; stir in butter and onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Stir onions into warm mashed potatoes. Spread half of potatoes into prepared baking dish. Layer with half fried bologna and sprinkle with half of cheese Repeat with remaining ingredients. Bake, uncovered, until cheese is bubbly, and center is hot, about 30 minutes.
