Brandied Strawberry Freezer Jam
8 c. hulled strawberries (2 ½ lb.)
1 2/3 c. sugar
5 Tbsp. instant powdered pectin
3 Tbsp. brandy
½ tsp. lemon zest
In large bowl, crush 1 c. strawberries with a potato masher. Continue adding berries and crushing until you have 4 c. crushed berries. In small bowl, stir together sugar and pectin. Add to strawberries; stir in brandy and zest. Stir 3 minutes. Ladle jam into clean half-pint freezer-safe containers, leaving 1/2” headspace. Seal and label. Let stand at room temperature 30 minutes. Store in freezer up to 1 year or in fridge up to 3 weeks. Makes 5 half-pints.
