Cherry Coke Cupcakes
1 (15.25 oz.) pkg. chocolate cake mix
1 can cherry flavored coal (Cherry Coke®)
2 c. heavy whipping cream
¼ c. powdered sugar
1 (12.5 oz.) can cherry pie filling
12 maraschino cherries
Preheat oven to 350°. Line 12 muffin cups with paper liners. Mix cake mix and cherry flavored cola together in bowl until batter is smooth. Spoon batter into prepared muffin cups about 2/3 full. Bake until muffins spring back when lightly touched, 18-23 minutes. Cool in pan for 10 minutes before removing to cool completely on wire rack. Beat cream in large bowl using an electric mixer until frothy; beat in powdered sugar until stiff peaks form. Lift your beater or whisk straight up: the frosting will form sharp peaks; refrigerate. Cut a well out of the top center of each cupcake and fill with 2-3 cherries from the cherry pie filling. Transfer frosting to piping bag or plastic bag with 1 corner cut off. Frost cupcakes and top each with a maraschino cherry.
