Slow Cooker Pizza
1 Tbsp. olive oil
1 ½ c. buttermilk baking mix (like Bisquick)
1/3 c. very hot water
1 ½ c. pizza sauce, divided
1-2 c. shredded Mozzarella cheese
Your choice of toppings: cooked hamburger, chipped ham or smoked turkey, broccoli florets, sautéed onions, sliced mushrooms
Drizzle olive oil on bottom of slow cooker. Using paper towel, wipe it around the sides too. Mix baking mix and hot water together in bowl until it forms a smooth ball. Using your finger, or a rolling pin, stretch ball until it’s about 4” bigger around than the bottom of your cooker, spreading it out so that it reaches up the sides of cooker by an inch or so the whole way around. Pour 1 c. sauce on top of crust. Spread it out so it covers crust evenly. Scatter pizza toppings evenly over sauce. Spoon another cup of sauce over toppings. Sprinkle evenly with cheese. Cover and cook on HIGH for 2 hours or until crust begins to brown around edges. Uncover, being careful not to let condensation on lid drip onto pizza. Let stand for 15 minutes. Cut into wedges and serve. Yield: 4-6 servings. (Best to use a 5-6 quart slow cooker).
