May 17th: CHERRY COBBLER

Fresh Cherry Cobbler

½ c. butter

1 c. all-purpose flour

1 c. white sugar

1 tsp. baking powder

1 c. milk

2 c. pitted sour cherries

¾ c. white sugar

1 Tbsp. all-purpose flour

Preheat oven to 350°. Place butter in 9×13” baking dish. Place in oven to melt while oven is preheating. Remove as soon as butter has melted, about 5 minutes. In medium bowl, stir together 1 c. flour, 1 c. sugar and baking powder. Mix in milk until well blended; pour batter into pan over butter. DO NOT STIR. Rinse out bowl from batter and dry. Place cherries into bow; toss with remaining ¾ c. sugar and 1 Tbsp. flour. Distribute cherry mixture evenly over batter. DO NOT STIR. Bake 50-60 minutes, until golden. A toothpick inserted into cobbler should come out clean.  Makes 12 servings.
