MARCH 18TH: LACY OATMEAL COOKIES

Lacy Oatmeal Cookies

2 eggs, well beaten

1 c. sugar

¼ c. melted butter

1 pinch salt

2 tsp. baking powder

½ c. flour

1 tsp. vanilla

½ c. light brown sugar

1 c. pecans (broken)

1 c. raw oatmeal

Mix all ingredients together, oatmeal last. Blend. Drop, about ½ tsp. per cookie onto sheet, well spaced and bake on top oven shelf for 10 minutes at 325° degrees. Remove from cookie sheet immediately and let cool until crisp. Yield: 3-4 dozen.
