MARCH 17TH: ST. PATRICK’S DAY and GREEN BEER

Glazed Mint Brownies 

2 squares (1 oz. each) unsweetened chocolate

½ c. butter – no substitutes)

2 eggs

1 c. sugar

½ c. all-purpose flour

Filling:

3 Tbsp. butter, softened

1 ½ c. confectioners’ sugar

2 Tbsp. milk

¾ tsp. peppermint extract

3-4 drops green food coloring, optional

Glaze:

½ c. semisweet chocolate chips

2 Tbsp. butter

In heavy saucepan or microwave, melt chocolate and butter. Cool slightly. In mixing bowl, beat eggs, sugar and flour. Stir in chocolate mixture. Pour into greased 9” square baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack. In a mixing bowl, combine filling ingredients; beat until creamy. Spread over brownies. For glaze, melt chocolate chips and butter; stir until smooth. Spread over filling. Refrigerate until filling and glaze are set. Yield: 12-16.
