JUNE 21ST: PEACHES AND CREAM and DR. PEPPER

Fruit Compote

2 medium ripe peaches, sliced

1 c. fresh or frozen blueberries

1 c. quartered fresh strawberries

2 kiwi fruit, peeled and sliced

¾ c. seedless red or green grapes

3 Tbsp. apple jelly

4 tsp. water

Vanilla yogurt and sliced almonds, optional

In bowl, combine peaches, berries, kiwi and grapes. In microwave-safe bowl, combine jelly and water. Microwave, uncovered, on HIGH for 45 seconds or until jelly is melted; stir until smooth. Drizzle over fruit. Top with yogurt & almonds, if desired. 8 servings.

Diabetics can use low-sugar or sugar-free jelly and add a packet of artificial sweetener just before serving. One ¾ c. serving (without yogurt/almonds) = 80 calories;
