JULY 18TH – CAVIAR

Texas Caviar

1 (12 oz.) can white corn, drained (or yellow or combo)

l red onion, chopped

1 (15 oz.) can black beans, rinsed and drained

4 oz. green chilies, not drained

1 (15 oz.) can pinto beans, rinsed and drained

1 each whole green pepper, red pepper and yellow pepper, chopped

3 Roma tomatoes, chopped with excess seeds & juice removed

Combine ½ c. white vinegar and ½ c. white sugar.  Boil about 2 minutes. Pour over vegetable mixture and let stand overnight. Makes about 2 quarts of caviar. Serve with Fritos Scoops.
