JULY 14TH – PICK BLUEBERRIES

Blueberry Breakfast Bake

1 ½ c. flour

2 tsp. baking powder

¼ tsp. baking soda

Pinch each of cinnamon and salt

1 stick unsalted butter

½ c. sugar

½ c. brown sugar

2 large eggs

½ c. buttermilk

1-pint fresh blueberries

Preheat oven to 375°. Grease 7×11 baking pan. Whisk together flour, baking powder, baking soda, salt & cinnamon. With mixer, beat butter & sugars until smooth. Add eggs one by one and beat for 1 minute. On LOW spread, mix half of flour mixture, buttermilk, and rest of flour. Gently stir in berries. Pour into pan. Bake for 45 minutes. Cool for 5 minutes, unmold, & cool right side up. Yield: 12.
