JANUARY 6TH – SHORTBREAD/BEAN

Chocolate Chunk Shortbread Cookies

¾ c. butter, no substitutes, softened

½ c. powdered sugar

1 c. all-purpose flour

½ c. cornstarch

3 squares (1 oz. each) semi-sweet chocolate, coarsely chopped (or mini chocolate chips (about ¾ c.)

In mixing bowl, cream butter & sugar. Gradually add flour & cornstarch. Stir in chocolate. Shape into 1” balls. Place 1” apart on ungreased baking sheets. Flatten with glass dipped in powdered sugar.

Bake at 300° for 30-33 minutes or until edges are lightly browned. Cool on wire rack. Makes 3 ½ dozen.
