JANUARY 26TH: PEANUT BRITTLE

Amish Cashew Brittle

1 c. granulated sugar

1 c. butter

1 Tbsp. light corn syrup (Karo® corn syrup)

1 ¼ c. salted cashew nuts

Cook sugar, butter, & corn syrup in sauce pan on very low heat until the candy reaches 290 degrees on a candy thermometer (approximately 25 minutes).  Remove from heat & stir in cashews.  Pour onto a buttered cookie sheet & cool completely.  Break into pieces & store in an air tight container.
