Homemade Sprinkles
8 oz. powdered sugar
1 egg white
½ tsp. kosher salt
1 tsp. vanilla extract
Food coloring
Pastry bag with piping tip with a small opening or preferably a multi opening tip, like #134
In bowl, beat all ingredients together until a smooth, thick paste is formed. (about the consistency of toothpaste). Tint with food coloring. (if you want to do more than one or two colors, it’s best to make a double batch). Load into pastry bag and pipe long lines on a parchment-lined baking sheet. Let dry 24 hours. Chop or break into desired lengths. (You can also use a plastic bag with a very s mall opening snipped into the corner, but you will get fatter sprinkles. And if you want to make more than one color, it’s best to make a double batch because since it’s so thick, it’s very difficult to pipe only half the batch.
