February 8th: Molasses Bars

Frosted Molasses Bars

½ c. shortening

½ c. white sugar

1 egg, beaten

½ c. molasses

1/3 c. hot, brewed coffee

1 ½ c. all-purpose flour

1 ½ tsp. baking powder

¼ tsp. baking soda

1 tsp. ground cinnamon

½ c. raisins

¼ c. butter

2 c. powdered sugar

2 Tbsp. cold, brewed coffee

Preheat oven to 350°. Grease and flour a 9×13” pan. In large bowl, cream together shortening and sugar. Blend egg, molasses and hot coffee. Sift together flour, baking powder, baking soda and cinnamon; stir into molasses mixture until well blended. Mix in raisins. Pat mixture evenly into prepared pan. Bake for about 25 minutes or until firm. To make icing: combine butter, powdered sugar and cold coffee in medium bowl; beat until smooth. Frost bars while warm,but allow them to cool before cutting.
