February 3rd: Carrot Cake

Isaac’s Carrot Cake

3 c. all-purpose flour

2 c. white sugar

2 ½ tsp. baking soda

2 ½ tsp. ground cinnamon

1 tsp. salt

¼ tsp. ground nutmeg

2 c. shredded carrots

1 (11 oz.) can mandarin oranges, drained

1 ¼ c. vegetable oil

3 eggs

2 tsp. vanilla extract

1 tsp. grated orange zest

Preheat oven to 350°. Grease a 9×13” baking dish. Whisk flour, sugar, baking soda, ground cinnamon, salt and nutmeg together in bowl. Beat carrots, mandarin oranges, oil, eggs, vanilla extract and orange zest into flour mixture with electric mixer until batter is smooth, about 2 minutes. Pour batter into prepared baking dish. Bake in preheated oven until toothpick inserted into center of cake comes out clean, 40-50 minutes.
