JANUARY 9TH – APRICOT

Apricot Chipotle Pork Ribs

3 lb. pork loin back ribs

Salt and ground black pepper

½ c. bottled chili sauce

½ c. apricot preserves

2 Tbsp. packed brown sugar

1-2 chipotle chile peppers in adobo sauce, chopped

Preheat broiler. Cut ribs into 1-2 rib portions. Sprinkle lightly with salt & black pepper. Place ribs on rack of unheated broiler pan. Broil ribs 5-6 inches from heat, (10 minutes or until brown), turning once. Transfer ribs to a 4-5 quart slow cooker. In small bowl, stir together chili sauce, apricot preserves, brown sugar & chile peppers. Pour over ribs in slow cooker. Cover & cook on LOW for 6-7 hours or on HIGH for 3-3 ½ hours. Transfer ribs to serving platter. Transfer sauce to small bowl; skim fat from sauce.  2/3/17
