DECEMBER 6TH – GAZPACHO

Pesto Grilled Cheese Sandwich (to accompany your soup)

2 slices bread

1 Tbsp. butter, softened

1 Tbsp. basil pesto

1 slice provolone cheese

2 slices tomato

1 slice American cheese

Heat a nonstick skillet over MEDIUM heat. Spread 1 ½ tsp. butter on 1 side of each slice of bread. Spread 1 ½ tsp. pesto on unbuttered side of 1 bread slice. Put slice into skillet, buttered side down. Top with provolone, tomato and American cheese. Spread remaining 1 ½ tsp. pesto on unbuttered side of second bread slice. Place over American cheese sin skillet, pesto side down. Cook, flipping once carefully, until both sides are golden brown and cheese has melted, about 5 minutes per side.
