Crispy Ice Cream Sandwiches

3 Tbsp. butter

10 oz. marshmallows

6 c. crisp rice cereal

½ gallon ice cream (vanilla or strawberry), softened

Red, white and green sprinkles

Chocolate chips, melted

Melt butter in large saucepan over LOW. Add marshmallows and stir until melted. Remove from heat. Stir in cereal until coated. Using buttered spatula or hands, press mixture evenly into 9×13” pan coated with cooking spray. Cool. Cut in half, removing half of cereal treat from pan. Spread ice cream on top of cereal in pan. Top with other half of cereal treat and press down. Freeze at least 4 hours, or overnight. Use a serrated knife to cut rectangle or square sandwiches. Dip sides of ice cream into sprinkles. Drizzle tops with melted chocolate. Serve 8.
