DECEMBER 2ND – FRITTERS

Crispy Potato Fritters

4 eggs, beaten

2 c. frozen shredded hash browns (thawed)

3 scallions, thinly sliced

2 oz. ham, sliced into thin strips

2 Tbsp. olive oil

In medium bowl, combine eggs, hash browns, scallions and ham. Heat olive oil in large skillet and cook spoonful of mixture until golden brown, 3 minutes per side. Serve with green salad.
