DECEMBER 19TH: OATMEAL MUFFINS

Oatmeal Muffins 

1 c. old fashioned oats

1 c. butter milk

1 egg

½ c. dark brown sugar

½ c. salad oil

1 c. flour

1 tsp. baking powder

½ tsp. soda

½ tsp. salt

Soften oats in buttermilk. Add egg, brown sugar, and oil. Mix to combine. In small bowl combine: flour, baking powder, soda and salt.  Mix dry ingredients with wire whisk. Blend. Add wet ingredients to the dry ingredients. DO NOT OVER BEAT. Bake at 400° for 20 minutes.
