DECEMBER 15TH: LEMON CUPCAKE

Mrs. Claus’s Lemon Cookies 

2 ½ c. all-purpose flour

¾ c. white sugar

2 ½ tsp. baking powder

½ c. vegetable oil`

½ c. milk

1 pinch salt

3 tsp. lemon extract

1 egg

Glaze:

1 ½ c. sifted powdered sugar

2 Tbsp. milk

1 t. lemon extract

3 drops yellow food coloring

Preheat oven to 350°. Coat baking sheets with cooking spray. In large bowl, combine flour, white sugar, baking powder, oil, milk, salt, lemon extract, and the egg. Roll dough into ½” balls and place on prepared baking sheets. Bake 12-15 minutes, or until cookies are set but not brown. Let sit 5 minutes; transfer to wire rack to cool completely. In medium bowl, combine glaze ingredients and stir until smooth. Dip tops of cookies in glaze and place on wire rack to cool.
